Pre-treatments of garlic cloves in hot water and packaging in BOPP films or equivalent were given to maintain high humidity and modified atmosphere. The product has a minimum shelf life of 3 days at ambient temperature (approx. 28ºC), and up to 15-18 days at low temperature storage (8ºC). It reduces problems of sprouting, browning and softening and the protocol does not involve any chemicals treatment.
